Scent before taste
Native to Central America, it spread through every tropical and subtropical region, carried by its ease of cultivation and fast fruiting, from the third year.
Its vitamin C content far exceeds an orange's, and its scent, from highly volatile esters, escapes before the fruit is even cut: a ripe guava announces itself from across a room.

Pick when the scent becomes clear and the skin slightly yielding: it ripens well at room temperature.

Cut back by a third after harvest: it fruits on the current year's shoots, and pruning doubles the crop.
