The purple of southern tables

Native to Southeast Asia and spread by the Arabs across the Mediterranean basin, the Aubergine became central to Maghrebi cooking, fried, grilled or stewed.

Very demanding of heat, it produces abundantly under the Tunisian climate, with a season running from June into autumn.
