The herb that preserves
Native to the Near East, it is among the oldest cultivated aromatics, named in Egyptian papyri and in medieval European texts alike.
Its link with preserving isn't only about flavour: its aromatic compounds slow the growth of certain bacteria, which made it a natural partner to brining long before anyone understood why.

Never transplant
Like coriander it has a fragile taproot: sow direct in stations, thinned to twenty centimetres.

Keep it away from fennel
The two cross readily and saved seed gives plants of muddled flavour: separate them by at least ten metres.

Cut the leaves before flowering; then let a few plants bolt to collect the umbels and seed.
